Chinese braised pork belly

Followed this recipe but with some modifications.
It turned out really well.

Modifications:
  • ginger (don't have galangal)
  • brown sugar instead of sugar and honey
  • forgot the pepper
  • fish sauce (ran out of oyster sauce)
  • no eggs (just didn't feel like them)
  • added some cardamom pods and cloves
Also at the end I removed the meat, strained the sauce (added a touch of vinegar), reduced it then added it back to the pork belly.

I can't wait to eat this.
It was one of those morning. Earl grey tea soon to be met with milk and honey.
